05 Apr Happy Tummy! Apple-Vanilla Kuzu Pudding
Today my daughter’s class went on a trip to the aquarium. There were lots of processed snacks exchanged between the students and of course she came home with a stomach ache. Fortunately, I had the solution in my kitchen. I just had to gather a couple of items and VOILA, problem solved.
One of the best things you can do for kids is to teach them how to cook. When cooking is simple like in this recipe, I usually gather all the ingredients and supplies and allow them to do the rest. In this particular case, I felt it was important that she learn about the consequences of her decision, and even more important how to rectify it. A subtle approach is usually more effective than nagging or yelling.
Meanwhile my youngest daughter picked out the cups and spoons we would be using for our evening treat (& natural remedy… shhhh). My eldest of 3 daughters just waited around to eat. She is old enough to know that anytime I’m giving them something unexpectedly, there’s usually a hidden healthy ingredient in it.
While I’m sure you’ve heard of apple juice and vanilla. You may not have heard of kuzu. Kuzu is a powerful agent for abdominal aching and intestinal irritation (I recommend it to those undergoing/underwent chemotherapy). It’s often used in macrobiotic cooking for making soups, sauces, gravies, desserts and for medicinal purposes. You can generally find it in your local health food store or natural foods supermarket for less than $10. The good thing is that a little goes a long way. If you can’t get it there, you can always order online.
- 2 cups organic apple juice
- 5 tablespoons kuzu
- 2 teaspoons vanilla extract
- In a small pot, combine apple juice, kuzu, and vanilla extract. Stir to combine. Bring to a boil, stirring constantly and quickly, and cook until mixture thickens. Serve hot or cold.
