A little over a week ago I had a really eventful Saturday. I started my day joining Newark’s Mayor, Cory Booker, in Jersey City during his campaign for the New Jersey senate. Appropriately titled, “Run With Cory”, a small group of about 50 participants took part in a 1.5 mile jog around the city. In the opening remarks, Cory Booker discussed his wish to abolish obesity by getting people to exercise more and to eat healthier food. The Mayor who won the the New Jersey Democratic primary for Senate last week (YAY!), mentioned being a vegetarian, then said, “If there was a tofu hot dog eating contest I’d win”. In other words, he likes to eat! Despite being injured he ran slow enough for most of the crowd to keep up with him but fast enough for us to work up a good sweat. After the run, all the participants enjoyed homemade ice cream at a nearby parlor with one of the coolest guys on earth who has also been described as a superhero after he ran into a burning building and saved a woman’s life.

Energized by what had occurred, I went back home, picked up the rest of the family, and headed over to a nearby farm to go peach picking. We enjoyed a hayride to the orchards and got tips from the farmer along the way on how to score the best peaches. We also learned that because of the recent weather changes, peaches made their appearance late this year. This means you still have time to enjoy them before they leave us until next summer. My youngest daughter had the most fun that day climbing her way up to the tops of the trees and grabbing the juiciest, ripest fruit.

I arrived home with SIX bags of peaches and lots of ideas of what to do with the enormous amount of fruit I had. My kids begged me for a decadent dessert at which point I suggested they all help me prepare this treat. This recipe isn’t the healthiest but it does include ingredients that are better than what is traditionally used. It’s one of those things that should be enjoyed in moderation. Peach season only happens for a short time so why not indulge in a little extra sweetness? With that said, I present to you Cory’s Cobber which happens to be dairy-free, vegan, and inspired by Cory Booker, who I believe will be New Jersey’s new Senator. By doing so, he would become the first African-American elected to the Senate since Barack Obama… wink wink 😉 . I hope you enjoy it as much as we did!

Serves: 6-8 Servings
Ingredients
  • Topping:
  • 1 cup whole wheat pastry flour
  • ½ cup unbleached white flour
  • 3 tablespoons coconut palm sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 4 tablespoons melted coconut oil
  • 1 tablespoon fresh lemon juice mixed with 6 tablespoons water
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon mixed with 2 tablespoons coconut palm sugar
  • Fruit Filling:
  • 3 pounds ripe peaches (peeled, pitted and cut into thick slices)
  • ½ cup coconut palm sugar
  • 1½ teaspoons vanilla extract
  • 1 tablespoon arrowroot
  • pinch of sea salt
Instructions
  1. Preheat oven to 375°
  2. In a bowl, combine flours, 3 tablespoons of coconut palm sugar, baking powder, baking soda and sea salt.
  3. Add lemon water, vanilla extract and melted coconut oil, then mix by hand until the mixture becomes crumbly (it should resemble corn meal).
  4. In a separate bowl, mix together the fruit filling ingredients using a rubber spatula and transfer to a pie plate or glass pie dish (if you don't have either of these items, use an 8-inch square or oval baking dish).
  5. Pour the dry/wet flour mix on top of the pie filling, then evenly sprinkle cinnamon-coconut sugar mixture on top.
  6. Bake until topping is browned and fruit is bubbling, about 40 minutes.
  7. Allow it to cool for 20 minutes, then serve.
  8. Optional: Top with ice cream of your choice for an extra-dreamy experience.
