Dear Kale:

I want to take this time to tell you how I feel about you. I spend my days thinking about you. I love you with a pear and ginger in a juice. I love you sautéed with as much sliced garlic as the pan holds and a drizzle of olive oil, a splash of lemon juice and a dash of sea salt. I love you added (just at the last moment) to any veggie soup or legume pot. But I love you MOST OF ALL as oven toasted chips that have been tossed with olive oil and lemon juice, sea salt, tons of turmeric and a generous splash of cayenne pepper. I love you curly, red, or in any other form.

I love the vitamin A, C and K that you give me with every bite. The copper, potassium, iron, manganese and phosphorus all help me stay healthy. The flavonoids and sulfur-containing compounds called glucosinolates that are believed to have antioxidant properties are some of the many reasons why I love you so! The two other compounds that you deliver, zeaxanthin and lutein, both are thought to play a role in protecting my eyes.

Thank you kale for being in my life and for all that you do for me.
