Eileen’s healthier twist on mangu was selected by Clara Gonzalez, founder of DominicanCooking.com  for Parade Magazine. This version omits some of the ingredients that have traditionally been used and includes new ones such as sea vegetables, Himalayan pink salt, and olive oil.
