Caribbean Blueberry/Pomegranate Popsicles

Ingredients
  • 1 cup coconut water
  • 1 pineapple, skin removed and cut into chunks
  • 1 large mango, skin removed and cut into chunks
  • ½ small papaya, skin removed and cut into chunks
  • -
  • 1 pomegranate
  • 1¼ cup fresh blueberries
  • ½ lemon
  • 2 tbsp raw honey
  • dash sea salt

  • Extras:
  • 1 package of Dixie cups
  • popsicle sticks
Instructions
  1. Begin by soaking popsicle sticks in water for at least 30 minutes. Pat dry them dry with a towel right before use. This will help keep them from floating up.
  2. Blend coconut water, pineapple, mango, papaya until it reaches a smooth consistency. Then set aside.
  3. In a separate bowl, place pomegranate seeds, blueberries, lemon juice, raw honey and sea salt. Mix using a spoon.
  4. Line up Dixie cups on a flat pan and fill with smoothie mixture a little more than halfway.
  5. Add a tablespoon of the berry mixture, making sure to grab 3-4 blueberries with each spoonful. Do not mix as this will allow popsicle sticks to remain in place.
  6. Place popsicle sticks in each cup, then drizzle about 1 teaspoon of remaining berry juice over each pop.
  7. Freeze overnight. Peel off Dixie cup and Enjoy!
